UNAIR NEWS – Universitas Airlangga (UNAIR) students have created cookies from eggshells to prevent osteoporosis. The idea written through the Student Creativity Program (PKM) has successfully received funding for the Entrepreneurship category from the Ministry of Education, Culture, Research, and Technology.
Huzaifah Arofik as the team leader said that the initial idea for the cookies was from calcium carbonate, which is an important compound that can prevent bone loss. Generally, these substances are consumed in the form of supplements, but their use is limited to a certain age and is relatively expensive.
Therefore, she continued that a new breakthrough ‘KIES KATEL’ was made as another alternative with the same benefits. In addition, these products have a more affordable price and can be consumed by all groups.
“Our team is trying to make a quality snack product named ‘KIES KATEL’ by utilizing research on eggshells which are high in calcium carbonate in the form of cookies. Thus, the cookies are not only very practical and efficient to consume but also useful for maintaining bone health,” said the student of the Faculty of Pharmacy on Monday, July 19, 2021.
In addition to health, Huzaifah revealed that the creation of the product could support the use of eggshells. As widely known, eggshells are abundant but underutilized.
She added that a study shows that the calcium in eggshells is 381 milligrams per gram of shell according to the 2019 AKK (adequate calcium intake) standard. Therefore, by consuming one package of cookies, you can meet adequate calcium intake per day.
“This product is available in two flavors, chocolate and strawberry, without any addition of preservatives because the preservation process has been carried out previously. The product is also in a practical and concise package with an interesting design,” she said.
Huzaifah hoped that these products could reduce the number of osteoporosis in the world, especially in Indonesia, and also reduce eggshell waste in the environment. (*)
