UNAIR NEWS – Festivities of welcoming 63rd anniversary of Universitas Airlangga  seen from various contests held on Sunday. One of them was a fish grill contest. On Sunday, October 22, the yard of UNAIR Management building Campus C Universitas Airlangga, the Faculty of Medicine (FK) UNAIR team won the fish grill contest.
Medical Specialist Education Program Students (PPDS) of Dermatology and Venereology FK UNAIR dr. Abdul Karim and dr. Khanisyah Erza Gumilar, Sp.OG with two educational staff FK UNAIR never thought that their artificial fish will make the judges choose them as the winner.
FK team had managed to create five different tastes of  grilled fish menu with the concept of traditional dishes. Rabbitfish, groupers, snapper, and pomfret fish provided by the committee was successfully processed into five different roasted fish. They are served with different sauces, Padang sauce, rujak, dabu-dabu, soy sauce and honey, and green chilli sauce with bitterbean.
Five grilled fish was even equipped with five different types of chills. That was the reason they named it Grilled Fish with 5 Tastes of Nusantara.
Karim, one of the team members, hesitated knowing the readiness of the other participants. Although they did nothing special in preparation, he and his team still confident with the concept of his grilled fish.
Besides the tastiness, the assessment aspect includes the ability of the participants to burn the fish perfectly. Hygiene, teamwork, and plating or serving on plates are also key aspects of assessment.
Their grilled fish has a clear and innovative concept of cuisine and is supported by a neat and visually appealing presentation. “Good thing our team is solid. Each focuses on their task given, grill fish, prepare spices, and prepare sides, “he said.
Cooking to Karim is not a new thing. The man from Banjarmasin is keen on cooking since sitting high school. “After wandering and living in a boarding house in Surabaya, I like cooking even more as I had to cook,” he said.
As a man, cooking is not just a routine of processing raw food ingredients, but also a complete art because it combines the sense of sight and taste. Cooking is not just a fun pastime.
“Cooking can reduce my stress level during my study. And cooking has become part of my life passion , “he said.
His proof of love for the culinary world was apparent when he won several cooking competitions several times. The man who was born in May 1984 had ever won Dean Cup Cooking Competition FK UNAIR for three times in a row in 2015-2017. Karim has also won a number of cooking competitions in Banjarmasin. “Once also auditioned Master Chef Indonesia, but not lucky,” he said.
He learned cooking techniques self-taught. To enrich the experience, Karim did not even hesitate to browse the latest cooking recipes and then try it. “Actually I do not have a special signature dish in cooking. I really like all kinds of cuisine, especially the main course. Both traditional and international, “he said.
In addition to cooking for self, Karim often receive orders from colleagues and lecturers. He felt the choice to cultivate the world of culinary and become a doctor is difficult to separate. “I will return to my home country as a doctor. And, if God allows, maybe I will also open a culinary business there, “he concluded. (*)
