UNAIR NEWS – The flourishing coffee shop business is a sign of great interest in consuming coffee or enjoying the atmosphere of coffee shops. Seeing this opportunity, the Ministry of Creative Economy, Universitas Airlangga Student Executive Board (BEM UNAIR) held a webinar to foster an entrepreneurial spirit, especially in coffee shop business.
Getting to know the stages of making coffee
In the webinar on Friday, September 3, 2022, the owner of Baccani Indonesia Coffee, Kevin Pradana, shared his experience in starting his coffee shop business. The Indonesian Young Entrepreneurs Association (HIPMI) member said that to start a coffee shop business, one should have basic knowledge of coffee-making.
“Knowledge on the taste of coffee beans will ease the menu innovation. The coffee beans generally used in Surabaya cafes are Robusta with its bitter taste, Arabica, which tends to be sour, and house-blend, which is a combination of several coffee beans,” he said.
After the sorting, the coffee beans will be roasted to bring out their distinctive coffee taste. The aroma and taste of coffee beans will change according to the roasting temperature. After that, the grinding of the coffee beans determines how coarse the resulting grain is.
Getting to know the market
Kevin advises students to focus on developing flavors that align with the target market’s wishes. “By knowing the public’s interests in coffee, then we can add mixtures such as milk, caramel, flavor powder, to adjust the taste of coffee to the tongue of the target customer,” he said.
Creating the concept of coffee shop
Most customers choose cafes that are comfortable to stay in for a long time, therefore, the concept of the place is very important. “Besides, it would be great if the employees were communicative and could create a comfortable atmosphere for customers,” he explained.
Determining the direction of business development
After achieving the desired profit, the businessman must also determine the steps to develop the business. “For example, you can expand, create branches with new brands, offer partnerships or franchises, ” he said.
Through the presentation, Kevin hoped to provide knowledge and, at the same time, nurture the interest for entrepreneurship in UNAIR students. Besides Kevin, the webinar also featured Moch Rifqi Nur Azizi, owner of Vox Populi, Cerita Lama, as one of the speakers. (*)
