Fighting stunting, BBK 7 students turn mackerel into protein-rich nuggets

UNAIR NEWS – Students from the Community-Based Learning Group (BBK) 7 Universitas Airlangga (UNAIR) have joined efforts to curb the risk of stunting in Karangrejo, Madiun. The group introduced an innovation by processing mackerel into nutritious nuggets, while engaging local housewives who have toddlers and school-age children.

The cooking demonstration took place at Asih Orphanage in Madiun on Saturday (January 10, 2026). Through this activity, the students highlighted the use of local food resources and intentionally avoided artificial additives commonly found in store-bought nuggets.

“We chose nuggets because they are a favorite among young children. Many commercial nuggets contain additives that may be harmful to health. That is why we developed a mackerel-based nugget made with safe ingredients to boost its nutritional content,” said Rachma Nabila Putri, a representative of BBK 7 Karangrejo, on Sunday (January 11, 2026).

Mackerel was selected due to its wide availability in the Karangrejo area. The fish is also high in protein, making it beneficial for children’s growth and an important component in stunting prevention.

Putri noted that the event faced several challenges, including a venue change just one day before the activity, which disrupted the initial plan. “The relocation affected the flow of the program and caused a delayed start. We also encountered technical issues, such as a microphone that did not function properly,” she explained.

Despite these setbacks, the program was met with a positive response from the local community. Putri said the participating mothers showed strong enthusiasm and remained engaged throughout the session.

“We hope this outreach can improve public understanding of the importance of balanced nutrition and encourage families to apply this innovation by preparing healthy, nutritious meals as part of ongoing efforts to prevent stunting,” she said.
