UNAIR NEWS – Faculty of Veterinary Medicine (FKH) Universitas Airlangga (UNAIR) promoted the use of Lamongan Regency’s livestock products to create innovative food products. This effort was realized through a workshop on livestock product processing for approximately 70 residents and MSME entrepreneurs at the Lamongan Regency Government Guest House, on Tuesday (September 29, 2026).

This workshop marked the first phase of a series of initiatives to launch the FKH assisted village in Lamongan. The participants took part in the workshop series of making chlorella noodles made of duck eggs and meat, as well as the making of yoghurt with a variety of flavors.

Developing duck potentials

The processing of duck eggs and meat into chlorella noodles served as one of the innovations that UNAIR FKH has introduced to the community. This product also served as an example of how livestock products can be transformed into food with new forms and new added value.

The program coordinator, Prof Dr Widjiati drh MSi said that this workshop is related to the development of UNAIR FKH assisted village which will receive two years of mentoring in Klagensrampat Village. The mentoring program was designed to ensure that the workshop provided has a lasting impact on the society.

“The target is this workshop will give impact and be sustainable. Hopefully MSMEs are capable of developing this into a local specialty product unique to Lamongan,” she explained.

This assisted village development was a part of UNAIR FKH efforts in building a network between assisted villages focused on livestock farming in Bojonegoro, Lamongan, and Gresik. The geographical proximity of these three areas to Surabaya and to one another became an opportunity to expand the mentoring program’s impact and promote sustainable management of livestock potential.

Introducing goat milk products

Beyond duck products, the participants were also given an opportunity to learn about the use of goat milk through a yoghurt making and taste-testing workshop. A variety of flavors were served, including a palm sugar flavored yoghurt.

“We observe that a number of areas in Lamongan Regency have the potential to produce goat milk. However, there is still room for growth in the utilization of goat milk through the diversification of processed products,” said the FKH lecturer.

The introduction of yoghurt served as a form of UNAIR FKH efforts in combining local farm product potential with food processing innovation. This knowledge will open an opportunity for the community and MSME entrepreneurs to develop products based on local resources.

Synergy between UNAIR FKH and Lamongan Regency Government

Lamongan Deputy Regent, Dirham Akbar Aksara ST BEng MSc, expressed his appreciation to the collaboration of UNAIR FKH in the assisted village program in Lamongan Regency. He mentioned agribusiness as one of the main pillars of the local economy.

“Our task is to make Lamongan a protein hub. Therefore, this is a very exciting collaboration between UNAIR FKH and Lamongan Regency to keep increasing the economy in the livestock sector,” he said. On the other hand, the series of the initiatives will continue with the launch of the assisted village program by the Regent of Lamongan and the Dean of UNAIR FKH, as well as a location review of the livestock farms that the residents will receive.
